Uncooked Tapioca Pearls

5 – 10 liters of water

White Sugar

125g

 

 Procedure

  1. Place 5 – 10L of water into a big tall pot, the more water the better if cooking in large quantities
  2. Place on HIGH HEAT, wait until water is bubbling boiling
  3. Pour the pearls in slowly while stirring in a circular motion at the same time until you’ve poured in the desired amount
  4. Check in on the pearls after 5 minutes, if all pearls have started floating to the top, LOWER HEAT TO MEDIUM, but make sure it’s still hot enough that it gives the pearls a soft boil
  5. After 20 minutes of boiling, SWITCH OFF the heat, cover the pot to simmer for another 20 minutes
  6. Pour your cooked pearls into a big strainer and run it under room temperature water to cool it down
  7. Place the pearls in your chosen container and add the sugar, mix it well and the pearls are best to last for 6 hours
