Procedure
- Place 5 – 10L of water into a big tall pot, the more water the better if cooking in large quantities
- Place on HIGH HEAT, wait until water is bubbling boiling
- Pour the pearls in slowly while stirring in a circular motion at the same time until you’ve poured in the desired amount
- Check in on the pearls after 5 minutes, if all pearls have started floating to the top, LOWER HEAT TO MEDIUM, but make sure it’s still hot enough that it gives the pearls a soft boil
- After 20 minutes of boiling, SWITCH OFF the heat, cover the pot to simmer for another 20 minutes
- Pour your cooked pearls into a big strainer and run it under room temperature water to cool it down
- Place the pearls in your chosen container and add the sugar, mix it well and the pearls are best to last for 6 hours
